What’s your holiday favorite recipe?

Now that Halloween has come and gone, the holiday season is in full force! Even though we have a little over 6 weeks left of the fall quarter, before we know it we’ll be on winter break and relishing in the holiday festivities.

Because I for one am already am in the holiday spirit, watching Hallmark movies and baking pumpkin goodies, I thought why not debut a new MARKET RECIPE card based on YOUR vote for a holiday classic recipe! So, to get the ball rolling, please like the UCSD Housing and Dining Facebook page and cast your vote to see which of the 4 holiday classics you would like to see made available in your neighborhood Market. 
 
Ingredients will be brought in and available for you to purchase with your Dining Dollars to cook in your resident hall and share with your friends.
 
So... would you like to see:
1. Creamy Mashed Potatoes
2. Classic Pumpkin Pie
3. Old Fashioned Stuffing
4. Pecan Sweet Potato Casserole

Rain...Rain..Go Away!

Welcome back UC San Diego! I hope you had a wonderful spring break. Now that we are back in full gear, I want to take a moment and thank all of you who participated in the National Nutrition Month Recipe Contest.  We had some great recipes submitted and you will soon see these in our Market locations displayed on the recipe cards.

I want to give a special shout out to Yasmin who had multiple entries and actually took the prize home for weeks 2 & 3 of the contest. Her final recipe was a Sweet Potato & Yam Soup that I think is perfect for a day like today.  So, if you’re feeling like staying in and making some soup, head over to your neighborhood Market and pick up these ingredients to have yourself a warm and comforting soup that’s full of vitamin A and fiber!

Sweet Potato & Yam Soup

Ingredients:

·         2 yams

·         1 large sweet potato

·         1 can of chicken or vegetable broth

Preparation:

·         Take yams and sweet potatoes and wash and peel them. Slice into round disks and place in the oven at 350* with a light oil or cooking spray for approximately 40 minutes.

·         Let cool. Add the disks then to your blender and pureed with equal parts broth until smooth and creamy.

·         Transfer liquid to pot (or microwave safe dish) and heat until warm!

Note: Yasmin likes to take it up a notch and bakes some sweet potato and yam chips in the oven. You can also purchase a whole grain tortilla chip or cracker to serve alongside as well.

If you’re out and about, make sure to stop into our restaurants and try one of our soup choices for the day. Or, pop into Roots over on Muir and get a bowl of delicious vegan chili. Nothing’s better to warm me up on a rainy day like today than a fiber filling bowl of delicious yumminess!

It's time for the Taste Buds!


Welcome to the HDH Taste Buds blog! You may have seen my face on one of the table tents at our restaurants or watched me cook with the other Taste Bud, Chef Vaughn, over at The Zone's Tasty Tuesday's events! For those who don’t know me yet, here’s the 411:


 Hi! I'm Liz!
I am the HDH (Housing-Dining-Hospitality) Dietitian here at UC San Diego. I am an advocate for YOUR nutrition, health, and overall wellness. I love to talk about food, recipes, fitness, exercise, hot trends in nutrition, new products on the markets...basically anything that revolves around the health field.

I enjoy creating new recipes using unique flavor combinations that  taste great AND are healthy. Don’t write me off as a food-judger just yet; for me, it’s all about balance and moderation. To satisfy my sweet tooth, I enjoy this latest creation from my kitchen: chocolate fudge peanut butter brownies...made out of black beans. Recipe coming soon!

I live a very active lifestyle and am a huge fan of hiking, rollerblading (it may be retro, but it’s great cardio!), and just about any other outdoor activity you can think of.
