Don't Let the Flu Get to You

Hey there Tritons!

Sorry it’s been a week since I have posted here, that darn flu took me down! In an effort to help promote healthy habits to fight the flu, I have some words of wisdom from a fellow dietetic student here in San Diego. Check out what Austin has to say about combating the flu!

Austin's Advice:

Being students automatically makes us much more susceptible to illnesses due to our constant interactions with other people and busy schedules but it should not stop us from sleeping and eating healthy. Sleep is one of the most important things that we need to make sure we get enough of consistently in order to allow our bodies to recover and protect from bacteria and viruses going around. Naps can save lives! If you don’t get much sleep late at night, I recommend to try and get at least a good 30 minute to hour long power nap during the day to give your mind and body some rest and time to recharge. Something as simple as a little nap can make a huge difference when avoiding the flu that’s going around.

I have found some Superfoods that are not only tasty and easy to eat on the run but they work much better than flu medications! Plus, you can pick them all up on your Dining Dollars at your local neighborhood Market or Dining Unit.

1.      Walnuts: One little cup of walnuts has nearly 18 grams of protein, 8 grams of fiber and lots of antioxidants which will not only fight off the flu but also keep you full when passing between classes. Throw some in a baggie and get to class!

2.      Spinach: There is a reason why Popeye was so big and energetic after eating it! There are large amounts of iron, calcium and antioxidants in the little green leafs also which help your body absorb and digest other vitamins and minerals while making you feel fantastic. Just stop into your local Dining Unit and pick up a Dietitian’s Delight Breakfast Sandwich, it’s packed with spinach to help keep you full for longer!

3.      Avocado: We live in California. Avocado tastes amazing and is very healthy for your heart and immune system so let’s take advantage of it! Half of an avocado has more than 4 grams of fiber with lots of potassium and zero cholesterol. Yes half. Avocados can be chopped up and eaten as a snack with some hummus or it can be used as a sandwich spread but either way it’s good for you and tastes even better.

Staying physically active can be one of the biggest determinants of becoming sick or not. Something as simple as taking the stairs to your car or up to the classroom rather than using the elevator will get the blood flowing. Sweating is another great way to detox your body and get rid of the bad toxins so I recommend going for a quick jog or doing something as simple as walking across campus do wonders for your body. Exercising whenever you have time allows your body to heal from the inside out and can keep you energized throughout the day.

Exercise, healthy eating, quick snacking and proper sleep patterns are some simple, yet extremely important factors that us as students must learn to incorporate into our daily routines to the best of our abilities. All of the above factors are clearly important to always be doing but the importance of them becomes much more critical when the San Diego Flu season comes around.

Did someone say cheese?!

Happy Thursday UC San Diego!

Today we have a special treat for you.... a guest post from a fellow UCSD student, Megan! Check out what she has to say about her latest experience at the 64 Degree Demonstration Station!!!


Hi I’m Megan. UCSD Student. Which often means busy, tired, and most of all, hungry.

For me, the live demonstration at 64 Degrees was perfect.  I attended The National Cheese Day Demo and felt like a VIP getting a personal show and insider cooking information! I loved learning cooking tips like different chopping techniques and flavor combinations from Executive Chef Vaughn Vargus. Meanwhile, Registered Dietician Elizabeth Shaw was constantly providing great nutrition facts and quick tips to make the dish healthier and more nutritious. I was extremely happy to hear from Elizabeth that softer cheeses are more nutritional. I will now eat only Brie for the rest of my days, BUT in moderation J (I learned that at the demo too!)


 
In addition to the valuable information I gained at the demo, Chef Vaughn and Elizabeth also ensured us that you can find all the ingredients for the healthy meal in our campus markets! This was exciting because as busy students, we often turn to quick yet unhealthy microwavable meals rather than cooking a nutritious meal. But knowing that we can access the ingredients for goat cheese and strawberry bruschetta, potato lasagna, and chopped salad with homemade dressing in our markets encourages me to easily walk to my neighborhood market and get all of these fresh ingredients to make a meal that I know is good for me.  




And last but not least, THE FOOD! The food was so delicious, and was a great treat to end the demo with. Not only did I feel full, I felt content knowing that I got in some healthy vegetables and proteins that kept me energized in my afternoon classes. This is definitely a meal I would make again, and a demo I would attend again. Thank you Tastebuds for an awesome time!

What’s your holiday favorite recipe?

Now that Halloween has come and gone, the holiday season is in full force! Even though we have a little over 6 weeks left of the fall quarter, before we know it we’ll be on winter break and relishing in the holiday festivities.

Because I for one am already am in the holiday spirit, watching Hallmark movies and baking pumpkin goodies, I thought why not debut a new MARKET RECIPE card based on YOUR vote for a holiday classic recipe! Happy Halloween UC San Diego

I know, I know; you’re adults and over the whole Halloween thing… right? Well, I for one am a child still at heart and love any holiday where you get an excuse to eat candy all day!!!

While “all day” may be stretching it a little, my point is you can surely find the right balance of treating yourself to a Halloween delight without breaking your nutrition bank for the day.

For instance, our Markets across campus are filled with satisfyingly sweet snacks that are not only delicious but nutritious. Check out my finds of the latest Taste Bud Approved sweet treats to pick up at your neighborhood Market this weekend.

Luna Bars are labeled as the nutrition bar for women, but they really are just a stellar nutrient packed snack that males and females alike can enjoy.  These are my top three flavors and are a great alternative to a candy bar between classes.

 
 
Maybe you prefer a little more salty than sweet? Well then my friends, you have to check out Annie’s Sweet & Salty popcorn mix, Back to Nature’s Sweet Potato Cinnamon Crackers or Somersaults Cinnamon Nuggets. With just the right balance of salty and sweet, you’ll satisfy that craving while getting a bit of fiber in at the same time!

  

 

For those of you who just can’t shake the craving for a decadent dessert, then opt for a Spooky Sprinkled Donut! These guys are a better option than the Pumpkin Cupcake or Muffin and when paired with a cup of milk actually provide you with a little bit of protein as well. Plus, it’s National Buy a Doughnut Day J.

Memorial Day Madness

For those of you partaking in Memorial Day celebrations this weekend, boy are you in store for a treat! Not only is the weather supposed to be in the mid-70s here in San Diego, but there are a plethora of fun activities occurring all around town.

Jump start your weekend by stopping into one of the Markets here on campus to load up on foods and fluids. Whether you plan on heading down to the beach or lounging at a backyard BBQ, it’s great to be prepared. Having fresh fruits and vegetables on hand, ready to eat, makes it that much easier to snack smart in the heat!

Here’s a few simple ideas to get your creative juices flowing:
 
·         Slice fresh strawberries over fresh frozen yogurt or sorbet. Not only will it be a refreshing treat, you’ll also get a great source of fiber and antioxidants.

·         Wash and freeze red grapes! The freezing process makes these a delicious mini frozen treat to pop in your mouth with no messy clean up!

·         Peel a banana and slice into quarters. Top with a dollop of peanut butter and one chocolate chip. Freeze and enjoy!

·         Cut cucumbers and carrots into “chips” and serve with a fresh hummus or yogurt based ranch dip. Not only will you enjoy a great source of protein, but you’ll also rack in the nutrients from fresh veggies.

·         Pick up a bag of oven baked or “popped” chips and serve with a yogurt based ranch dip. You’ll get the crunch without the 20 + grams of fat from a regular potato chip.

Hello Sun God

Today marks the 20th anniversary of the UC San Diego annual Sun God Festival. The event started back in 1984 as a celebration marking the one year anniversary of the statue of the Sun God, the first piece of the famous Stuart Collection here on campus.

Sun God has expanded drastically over the last two decades, however the idea behind the day remains true at heart…which is to allow students an opportunity to enjoy themselves post mid-terms.  Though the hope is that all students will be responsible and keep their wellness in mind, I know sometimes the atmosphere of the day soaks into your bloodstream and you may forget some of the important basics, like hydrating and eating!

In order to prevent heat exhaustion in these extreme temperatures, I recommend you load up on fluids… like water and juice J! Water is an excellent natural coolant for your body and will help regulate its internal temperature to prevent you from over-heating. Make sure to strive to hit at least 8 cups of water throughout the day.

Also, don’t forget to stop into the Dining Unit or Markets to grab a little something to nosh on so you can be fueled up for the festivities on the field! Remember though, all of the Dining Units & Markets will be closing at 8:00 PM tonight, so be sure to grab your late night eats early on.

National Allergy Awareness Month

Every 3 minutes a food allergy reaction sends someone to the ER, with symptoms ranging from a mild response to anaphylaxis, an extremely severe and sometimes fatal reaction.

In order to promote allergen awareness here on campus, Dining Services is hosting a special event with yours truly this Thursday, May 8th, from 11am-1pm on Revelle Plaza. Join us to discuss what UC San Diego can offer you in terms of special dining features if you are one of the more than 15 million Americans who suffer from a food allergy. You are not alone and WE (Dining Services) have the resources to help you get a nutritious and delicious meal that suits your dietary needs.



Plus, check out the latest products available to you in our Markets that are allergen friendly while munching on samples from some of the hottest vendors (Calbee Harvest Snaps, Enjoy Life Foods & Barefruit Snacks).

Chocolate Extravaganza... Count me in!

Did you know tomorrow (May 2nd) mark’s 6th College’s 10th annual Chocolate Festival?! The event began in 2004 and has delighted students and staff ever since.  Three enormous chocolate fountains arriving from the local Chocolate Monkey Company will fill 6th College’s quad with an array of cookies, cakes and fresh fruits to enjoy & dip into the chocolate goodness!


Why is your RD promoting chocolate? If you haven’t heard, chocolate boasts a variety of health benefits.  In particular, dark chocolate has been shown to reduce the risk of heart disease due to its naturally occurring flavanol content. Bottom line, there is some truth to the saying “a piece of dark chocolate a day may keep the doctor at bay!”
Why else should you check out 6th College tomorrow? Well, besides indulging in a deliciously “healthy” chocolatey treat, you will be able to increase your physical activity by participating in games with your peers! Out on the Res Hall Quad there will be inflatables, game booths, and this year they are incorporating a “Pie Your Professor” element.  Students have the opportunity to donate cans to pie their professor. 

Not a fan of chocolate? Don't worry! Foodworx and 6th Market are right next door to provide you with a selection of delicious eats to satisfy your craving.

Happy National Soy Foods Month

April is National Soy Foods Month! Check out the versatility of soy:

• Soy milk or yogurt is an excellent source of protein and calcium on-the-go that can be found at any of our Markets

• Add some locally-produced San Diego Soy Dairy Tofu on your salad next time you’re in a Dining Services Restaurant to top off your salad. The possibilities are endless!

In addition to being a stellar protein source, soy is also relatively low in calories and total fat. The minimal fat it does contain is naturally occurring from plant sources, which helps protect your heart and lower your cholesterol levels over time. Believe me, it’s something you will be thankful for in your 30s!

 2-Ingredient Chocolate Milkshake

HAPPY NATIONAL SOY FOODS MONTH!!!

What better way to celebrate than with a chocolate milkshake right?!?! I would be lying if I told you that I don't crave a nice creamy chocolate milkshake from In-and-Out but I found an easy (and healthy!) way to duplicate it.  This is one of my favorite recipes to make because it could not be any simpler (just 2 ingredients) and it’s something you can feel good about treating yourself to. Plus, you can use your Dining Dollars and pick up the ingredients at your Neighborhood Market.

All you need is:

8 oz of Chocolate Soy Milk

1 Banana

All you do is:

1. Slice banana and freeze for at least 4 hours.

2. Place frozen banana slices in blender and add chocolate soy milk.

3. Blend until nice and smooth!

There you have it: the simplest and healthiest chocolate milkshake ever.

You can even further customize it by adding protein powder, extra chocolate, or another fruit like strawberries (chocolate strawberry milkshake? yes please!)  Whatever you decide take the time to celebrate National Soy Foods Month and reward yourself for all of your hard work.

Rain...Rain..Go Away!

Welcome back UC San Diego! I hope you had a wonderful spring break. Now that we are back in full gear, I want to take a moment and thank all of you who participated in the National Nutrition Month Recipe Contest.  We had some great recipes submitted and you will soon see these in our Market locations displayed on the recipe cards.

I want to give a special shout out to Yasmin who had multiple entries and actually took the prize home for weeks 2 & 3 of the contest. Her final recipe was a Sweet Potato & Yam Soup that I think is perfect for a day like today.  So, if you’re feeling like staying in and making some soup, head over to your neighborhood Market and pick up these ingredients to have yourself a warm and comforting soup that’s full of vitamin A and fiber!

Sweet Potato & Yam Soup

Ingredients:

·         2 yams

·         1 large sweet potato

·         1 can of chicken or vegetable broth

Preparation:

·         Take yams and sweet potatoes and wash and peel them. Slice into round disks and place in the oven at 350* with a light oil or cooking spray for approximately 40 minutes.

·         Let cool. Add the disks then to your blender and pureed with equal parts broth until smooth and creamy.

·         Transfer liquid to pot (or microwave safe dish) and heat until warm!

Note: Yasmin likes to take it up a notch and bakes some sweet potato and yam chips in the oven. You can also purchase a whole grain tortilla chip or cracker to serve alongside as well.

If you’re out and about, make sure to stop into our restaurants and try one of our soup choices for the day. Or, pop into Roots over on Muir and get a bowl of delicious vegan chili. Nothing’s better to warm me up on a rainy day like today than a fiber filling bowl of delicious yumminess!

Surviving Finals: 101- Guest Post!

Check out the latest advice from our guest contributor, Ms. Evelyn Nash over at Warren.

 With finals week approaching quickly, I am definitely spending more time studying and less time cooking.   Surviving on less sleep and more caffeine than usual, the pastries, energy bars, and other convenient items start to look more appealing.  BUT…in order to properly fuel my body and my brain I have found that substituting meals with snacks is not sufficient. Food is fuel and I need to nourish my body with the proper carbs, fats, and proteins.

To help make some changes I found this amazing website called MyPlate.gov (http://hdh.ucsd.edu/TasteBuds/healthyhabits.asp) with tons of tips and tricks to eat well.  Searching the site the other day I found that the more "convenient" items we tend to go for do not satisfy my hunger.  While these items might taste good, they don’t replace the value of a “real meal.”  So, here are some tricks I have found helpful and thought I would share with you so you too can be in tip top performance for your exams!

Breakfast:  As easy as it might be to just grab a donut from Earl's in the morning, I find that I am usually hungry within an hour after doing so.  MyPlate.gov recommends that women between the ages of 19-30 consume 6 ounces of grains a day and men at these ages consume at least 8 ounces! I have been loving the little individual to-go oatmeal cups! They are just as easy as grabbing a muffin but actually give me more fiber to help fuel my body all morning.

Lunch: When lunch rolls around grabbing a bag of chips or a power bar may seem like the best possible time-crunch choice, but the Market-To-Go sandwiches or a quick salad made from one of the Dining Services Restaurants is much better at keeping my brain clear and alert.  Having a more substantial meal with proteins and good-for-you carbohydrates as opposed to a salty snack will help you maintain your focus for your long afternoon.

Dinner: I don't know about you but when the clock hits 6pm my stomach starts grumbling.  Entering the Dining Services Restaurants I am overwhelmed by the smell of the grill items like the fries, burgers, and pizza. Though all are delicious and can fit in a balanced meal plan, I have found choosing the Taste Bud-approved meals instead to be a no-brainer! I love not having to rack my brain about what’s the healthiest choice for me and know it will taste good, too.

My biggest tip to survive finals week would be that when it comes to meals, don't take the easy way out with quick packaged convenience foods. There are just as many, if not more, balanced meal options on campus that will actually sustain you through those 1am cram sessions.

Highway to Heart Health

Did you know that February is National Heart Awareness Month? Heart disease is the leading cause of mortality in the US today.  Although most people associate heart disease as something that affects older generations, more research is showing the detrimental effects of heart disease on our younger population. Why?  

Well, it really is a combination of both dietary choices and physical activity. It’s no surprise that obesity is on the rise due to American reliance on convenience foods that are easy to grab on-the-go. Although they may be satisfying in the moment (who doesn’t enjoy a Pop-Tart on your way to class?), continuing to eat these foods day after day may increase your risk of developing conditions related to heart disease.

Don’t get me wrong; I’m not saying eating a donut or breakfast pastry will cause you to have a heart attack! What I am suggesting is that you pay closer attention to the conveniently packaged items you eat on a daily basis and challenge yourself to try one of Ms. Nash’s quick and convenient heart healthy ideas for on-the-go munching!

Show Yourself Some Love

As a busy college student, being healthy and nourishing our bodies sometimes gets set aside.  This task becomes especially more difficult because February also means midterms. Suddenly soda, French fries, and candy look much more appealing than healthier alternatives.  Fortunately I found some amazing options in the marketplaces on campus that are not only heart-healthy but are delicious and provide great study fuel for 8th and 9th week grind.

1. Strawberries are full of heart-healthy vitamin C, fiber, and antioxidants.  They satisfy a sweet craving without sacrificing nutritional benefits.  I like eating them with low-fat yogurt for a creamy treat.

2. A handful of almonds is not only a filling and protein-rich snack, but heart-healthy!  Almonds have been shown to help control blood sugar which can prevent heart disease.  If you don't like them plain you can also purchase one of the trail mixes sold at the markets.

3. It is true that an apple a day keeps the doctor away.  Whether you enjoy apples plain, on top of your morning oatmeal, or with a spoonful of nut butter they are very good for your heart.  Apples help to lower bad cholesterol and they are extremely filling.

4. When munchies strike don't reach for chips or candy, try popcorn instead.  Air-popped popcorn is actually packed full of fiber that can help prevent heart disease.  As long as you keep your popcorn plain (avoid topping it with rich butter or cheese) you can enjoy a guilt-free snack and satisfy your salty cravings.

New Year’s Evolution

Happy 2014 UC San Diego! I hope you all had a wonderful holiday break and were able to enjoy some well-deserved time off.

If you are one of the many who vow “this year, I will…” and make countless resolutions to improve your health and lose those extra pounds in 2014, I suggest you take a moment and rethink your outlook. Did you know that only 20% of New Year’s resolutions are actually carried out successfully?

Given these odds, I like to think of the New Year as a perfect time to revisit some of the habits that perhaps you wish you had changed in 2013 but for some reason never really could get them to stick. For example, let’s take the most popular resolution that stems around making your health a priority. First, you must consider WHY this is important to you? Do you have a family medical history like Type 2 Diabetes that concerns you?  Are you trying to avoid the freshman 15? Or, is it merely to attain a specific number on the scale?

If your goals seem to be more in line with question #3, then I am sorry to say that this will PROBABLY put you right into that 80% of people who have trouble sticking to their resolutions. However, if you find yourself favoring questions 1 & 2, you are VERY likely to achieve your 2014 health goals.

The reason is people tend to lose sight of the big picture when they focus on numerous short-term goals. For example, wouldn’t it be boring to eat oatmeal and chicken salad every day for the rest of your life just to attain a specific number on the scale? Plus, who can even say that a particular number is right for YOU?!? The important thing is to look at LASTING changes, like incorporating more whole grains and fresh fruits and vegetables into your daily intakes. Without a doubt, eating more of these items will show in the long run on both the scale and your overall health!
