UNPLUGGED @ OVT

Thurgood Marshall College is hosting an open mic night starting at 8:30PM at OceanView Terrace. Grab your friends and head over to enjoy your fellow UC San Diego peers debuting their musical talents!

OVT will also stay open late so you can satisfy your late-nite hunger strikes. Just a few tips from your RD: if you haven’t had dinner, I recommend the grilled chicken sandwich or black bean burger off the grill. Both are excellent sources of lean protein that will keep you feeling fuller longer.

If your sweet tooth is a-yearning, then try the specialty pies served just for tonight’s event. OVT has a wide selection sure to meet your fancy…apple, cherry, peach, mixed berry & blueberry! Hey…berries’ have antioxidants…right J!

Say Cheese!

Everybody’s Favorite…Grilled Cheese

Happy National Grilled Cheese month! This timeless classic is an easy go-to for adults, teenagers, and children alike AND it’s conveniently found in all of our Dining Units at the Value4U price of $1.95.

He recently placed third in the Grilled Cheese Invitational in Los Angeles, debuting the Godfather. It’s a blend of 10 Italian cheeses grilled to perfection with a garlic infused olive oil to crisp up the outer layers, with a hint of oregano and basil. His unique spin on the classic gives you 2 different flavors depending on which side of the sandwich is up…Garlic-ness or Cheesey-ness… you decide!

I’m promoting grilled cheese because:

·         Cheese is a great source of protein, dietary fat, and calcium which are essential nutrients for every age group.

·         If made on whole wheat bread, it’s an easy way to increase your grain intake while also adding more fiber into your daily diet.

·         It’s versatile! Throw on some sliced tomatoes, apples, avocado, or even grilled kale and increase your vegetable intake while providing a slightly different flavor profile!

All of our Markets throughout campus offer a variety of fresh produce, whole grain breads, and spreads to get you in the spirit to create a Grilled Cheese that speaks to you. Happy National Soy Foods Month

April is National Soy Foods Month! Check out the versatility of soy:

• Soy milk or yogurt is an excellent source of protein and calcium on-the-go that can be found at any of our Markets

• Add some locally-produced San Diego Soy Dairy Tofu on your salad next time you’re in a Dining Services Restaurant to top off your salad. The possibilities are endless!

In addition to being a stellar protein source, soy is also relatively low in calories and total fat. The minimal fat it does contain is naturally occurring from plant sources, which helps protect your heart and lower your cholesterol levels over time. Believe me, it’s something you will be thankful for in your 30s!

 2-Ingredient Chocolate Milkshake

HAPPY NATIONAL SOY FOODS MONTH!!!

What better way to celebrate than with a chocolate milkshake right?!?! I would be lying if I told you that I don't crave a nice creamy chocolate milkshake from In-and-Out but I found an easy (and healthy!) way to duplicate it.  This is one of my favorite recipes to make because it could not be any simpler (just 2 ingredients) and it’s something you can feel good about treating yourself to. Plus, you can use your Dining Dollars and pick up the ingredients at your Neighborhood Market.

All you need is:

8 oz of Chocolate Soy Milk

1 Banana

All you do is:

1. Slice banana and freeze for at least 4 hours.

2. Place frozen banana slices in blender and add chocolate soy milk.

3. Blend until nice and smooth!

There you have it: the simplest and healthiest chocolate milkshake ever.

You can even further customize it by adding protein powder, extra chocolate, or another fruit like strawberries (chocolate strawberry milkshake? yes please!)  Whatever you decide take the time to celebrate National Soy Foods Month and reward yourself for all of your hard work.

Rain...Rain..Go Away!

Welcome back UC San Diego! I hope you had a wonderful spring break. Now that we are back in full gear, I want to take a moment and thank all of you who participated in the National Nutrition Month Recipe Contest.  We had some great recipes submitted and you will soon see these in our Market locations displayed on the recipe cards.

I want to give a special shout out to Yasmin who had multiple entries and actually took the prize home for weeks 2 & 3 of the contest. Her final recipe was a Sweet Potato & Yam Soup that I think is perfect for a day like today.  So, if you’re feeling like staying in and making some soup, head over to your neighborhood Market and pick up these ingredients to have yourself a warm and comforting soup that’s full of vitamin A and fiber!

Sweet Potato & Yam Soup

Ingredients:

·         2 yams

·         1 large sweet potato

·         1 can of chicken or vegetable broth

Preparation:

·         Take yams and sweet potatoes and wash and peel them. Slice into round disks and place in the oven at 350* with a light oil or cooking spray for approximately 40 minutes.

·         Let cool. Add the disks then to your blender and pureed with equal parts broth until smooth and creamy.

·         Transfer liquid to pot (or microwave safe dish) and heat until warm!

Note: Yasmin likes to take it up a notch and bakes some sweet potato and yam chips in the oven. You can also purchase a whole grain tortilla chip or cracker to serve alongside as well.

If you’re out and about, make sure to stop into our restaurants and try one of our soup choices for the day. Or, pop into Roots over on Muir and get a bowl of delicious vegan chili. Nothing’s better to warm me up on a rainy day like today than a fiber filling bowl of delicious yumminess!
